This is an easy snack that can be made and stored for a few days for those moments when you are about to reach for a cookie. This is….soft like a cookie?! 🙂
Preheat your oven to 400 degrees.
I used 3 zucchini for this. Cut in half the long way, than cut those halves in half the long way again. Now slice them so they are smaller and more bite size.
Place them in a shallow baking dish. Coat with olive oil and lightly salt them. Finish the seasoning off by covering them with Italian Seasoning.
Bake for about 20 minutes depending on how soft you want them to be.
