>Meal prep: my best friend… I am always looking for new recipes so that I’m not eating the same thing week after week. I started looking for recipes to use some of the things that I already had at home. I recently purchased a Costco sized bag of quinoa (huge amount for only $10). Well, I came across breakfast quinoa recipes. Here is what you need to make 4 servings
*4 tablespoons quinoa
*2 banana, sliced
*1 cup water
*1 cup milk (I drink almond/coconut milk)
*6 Tablespoons rolled oats
*2 pinches of salt
*2 pinches of cinnamon
*4 Tablespoons chopped walnuts
*1 teaspoon vanilla extract
*4 teaspoons brown sugar
It may sound like a lot of ingredients, but its not!
1. Combine water, quinoa, and milk in a medium saucepan and cook until mixture starts to boil. Reduce heat to low and let simmer for about 5 minutes or until the quinoa begins to soften.
2. Stir in the banana, rolled oats, salt and cinnamon. Cook, stirring frequently over low heat for another 2-5 minutes or until the mixture thickens. Remove from heat and stir in the brown sugar and vanilla. I recommend if you are packing the food for a week, don’t add the walnuts until you are ready to eat.
3. When I am ready to eat a serving, I heat in the microwave for about 1 minute and then add my walnuts. If you have it available, you can also add a little milk!
