Soo…you don’t know what to cook tonight…

I recently learned about the super food: QUINOA (keen-wah) and decided to look up recipes.  In case you don’t know what quinoa is here you go:



A seed in the spinach family that is almost as close to a perfect food as you can get. A one cup serving of quinoa has 220 calories, 5 grams of fiber and 8 grams of protein!


You can find quinoa in your grocery store in the ethnic food section usually on the top shelf where the rice is. An even better place is at Costco where you can buy it in bulk  and you can even buy it with a rice mix.


Anyway, I came across a recipe that seemed easy  enough to make and included some of my favorite foods.

Here is what you need:

  • Quinoa
  • 2 Avocados
  • 2 Oranges
  • Salt & Pepper
  • Basil
  • Shallots
  • Scallops

Its pretty simple:

  1. Follow the cooking instructions on the quinoa bag. Get that started first because it takes around 25 minutes to fully cook
  2. Cube your avocados and oranges and place in a bowl together.
  3. Next dice the shallots and cook them for only a few minutes. Add them to the avocados and oranges.
  4. Cut the ends off your basil and slice a few times, add the basil to the avocado mix.
  5. Get your shallots cooking. If they are frozen allow them to become soft and cooked through. If you bought them fresh, cook for about 4 minutes. Add a little salt and pepper.
  6. By now, your quinoa should just about be done. There should be no liquid in the pot and the quinoa should be fluffy.
  7. Put the quinoa on your plate first, add the avocado mix and top that with the scallops.

If you really feel like going big, you can make a fresh fruit smoothie using greek yogurt, and coconut milk.

I went really big and boiled an artichoke as well!
